When Will Cheeburger Open in Easton?

Hamburger chain Cheeburger Cheeburger June grand opening looking more like July, co-owner says.

Anyone who's been hankering to try a burger from Cheeburger Cheeburger will have to wait a little bit longer.

The '50s-style burger joint with an SNL reference name had been due to open this month on Northampton Street.

But Frank Aversa, one of the men who'll be running the restaurant, said Friday that he's aiming to open in the third week of July.

"We got delayed a little," Aversa said, noting that the space at 336 Northampton St. is different from other Cheeburger's.

For one thing, it's part of Easton's historic downtown, so it can't look like a typical suburban chain restaurant. The space is also bigger than what they're used to working with.

And because it's on the bottom of a residential building—the Pomeroy lofts—Aversa said they have to be careful where they place the restaurant's exhaust system.

"In the long run, it's going to look much nicer," he said.

The company has said it plans to stay open seven days a week and will operate around the clock, 24 hours a day, on Thursday, Friday and Saturday. This makes Cheeburger the second downtown fast-food joint this year to cater to the late-night crowd, following N. Fourth Street's Downtown Dawg.

Cheeburger Cheeburger has more than 60 restaurants in 18 states, with the Easton site being its sixth in Pennsylvania.

Although it seems to take its name from the John Belushi SNL skit about a diner with a pretty limited menu, the chain says its claims to fame are its angus beef burgers with multiple toppings and its 1.2 million flavor combinations of milk shakes.

The first phase of the Pomeroy renovations featured apartments on top of that opened late last year.
